Cod au gratin

Of the many wonderful ways cod fish can be prepared, Cod au Gratin has been, and remains a Newfoundland favorite. There are a many ways to prepare this dish. Most start by boiling the fish. Mine doesn’t ; I could never wrap my head around why you would boil the flavor out of something before cooking it. Not to mention cod fish takes minutes to cook. My method uses raw fish and can be prepared and then frozen uncooked for many meals to come. Like here, I spent the day at my friend Marion’s, we made up 30 for the freezer. Absolutely fantastic when you are in a hurry and have little time to prepare. You can purchase the containers at any local grocery store or dollar store.

No matter what the method I’m sure Cod au Gratin will become a family favorite in your home as well take it easy on the cheese you don’t want to overpower the delicate taste of the beautiful cod fish. Here’s my recipe.

Ingredients:

  • 2 lbs of cod cut into 1 ” cubes
  • 1/4 cup of real butter
  • 2 cups of whole or 2% milk
  • 1/3 cup flour
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1/2 tsp. black pepper
  • 1 Tbsp real Mayo
  • 1/2 Tbsp white wine vinegar
  • an onion diced small
  • 1 Tbsp. prepared yellow mustard
  • 1 cup cheese
  • 1 cup of crumbs with a little melted butter crumbs or crackers work well

Arrange cod in a single layer in the bottom of your dish. Place paper towel on top as to soak up excess moisture as well as it keeps it clean while your working. Saute onion until shiny and translucent. Remove from pan, set aside and melt butter in the same pan. ( don’t want to loose any onion flavour) When your butter is melted, stir in your flour to make a paste. Slowly add your milk stirring constantly to ensure no lumps. ( this is the trickiest part) Once all the milk has been added. stir in your mayo, mustard, vinegar, salt, pepper and your sauted onions. Pour over cod fish. Add your cheese then crumbs and bake at 375 for 20-30 mins.

Note:

If preparing for the freezer be sure to freeze as soon as you get them made up. Thaw in the refrigerator before cooking , don’t thaw on your countertop. Cooking time may be longer after freezing.

  6. In 2019 my husband and I visited Newfoundland from Ontario. We ate chowder anywhere it was offered and, as I recall, cod every day.
    We were given a scrumptious recipe from the innkeepers of the Rothesay Inn in Harbour Grace and I prepare it every now and then. Delish!
    But now…a new favourite…so easy, I didn’t really measure anything. And of course the cod isn’t anything like what you have ; us Bryson far from the sea. But it was sooooo good.
