
Warm and spiced with sweet cranberries and cinnamon chips this tried and true recipe is Julie’s Most Favorite recipe! Super moist with the most wonderful scent of cloves, allspice, freshly grated nutmeg and cinnamon chips. These ultimate muffins are truly to die for! I can’t wait for you to try them.
I absolutely adore the fall because not only do I get to see an array of beautiful colors, it’s also when I know Tim Horton’s will be selling their Pumpkin cream cheese muffins! Yum! I just can’t get enough, so a few years ago I came up with this recipe that is equally as good if not better!
If your unsure of what Tim Hortons is, It’s a very busy coffee and donut shop very similar to Starbucks. Heres a link if you want to check them out.

You can also fill these with a cream cheese mixture; it gives then an even more delicious flavor but absolutely not necessary as they are extremely yummy with or without the cream cheese. I swear these would win a baking competition given the opportunity!
I used cinnamon chips in this tried and true recipe, which a lot of people haven’t heard of and to be honest I hadn’t until an old family friend told me of them. She had made the most wonderful pumpkin scones using the chips and I just had to have them. If you are having a difficult time finding them you can absolutely omit them but they do add a certain Je ne sais quoi. Yum! Don’t worry I’ll share a link.

In order to prepare these absolute best pumpkin spice muffins you will need the following ingredients:
- 1 can of pure pumpkin puree 796 ml make sure its pure pumpkin different than pumpkin pie filling
- 4 1/2 cups of all purpose flour
- 3 cups of white granulated sugar
- 3 tsp. of baking soda
- 1 tsp. baking powder
- 3 tsp. ground cloves
- 3 tsp. cinnamon
- 3 tsp. ground nutmeg I use fresh
- 1 1/2 tsp. ground all spice
- 1 1/2 tsp. salt
- 1 cup of vegetable or sunflower oil
- 4 large eggs or 5 small I used 4 and the yolk of one (saved the white to coat pumpkin seeds)
- 1 cup of cinnamon chips ( don’t worry I’ll share what they are and how they look)
- 1 cup of dried cranberries and or 1 cup of golden raisins
- pumpkin seeds optional
How to make the Ultimate Pumpkin Muffins:
Preheat oven to 350 degrees
Sift dry ingredients: flour, sugar, baking soda, baking powder, spices and salt
In a separate bowl beat pumpkin oil and eggs with a hand mixer for a minute or so
Stir this mixture into the floured mixture, Add cranberries and or raisins, Add cinnamon chips (optional) Add a small handful of pumpkin seeds ( save some for the top)
Place in baking cup lined muffin pans
Mix pumpkin seeds with a bit of egg white that was lightly beaten place a few seeds on top of each muffin
Bake at 350 for30-35 minutes

Should you want to put a cream cheese filling in the center of each simply beat 8 ounces of cream cheese with one egg and 1/3 cup of sugar. Remove muffins 1/2 way through baking and place a tbsp. or so on top of each muffin and return to oven to finish baking. Please work quickly when doing this step.

Cinnamon chips, apparently these are difficult to find. They taste similar to the inside of a cinnamon roll. You can find them at Nans Pantry in the Gander Mall or co-op Gander, NL

When grated fresh, the fragrance and flavor is superior to any pre ground nutmeg you can find. In my opinion.
If you didn’t want to make all muffins as this recipe makes quite a few, you can certainly make a couple dozen muffins and a couple of mini loaves like I did. They freeze very well! Betcha can’t eat just one!
