Crispy deep fried cod fish! Yum!

Light, crispy and perfectly golden brown, todays tried and true recipe is one of the easiest and most delicious fish batter recipes you will ever find! Fresh Atlantic cod fish caught by yours truly is absolutely the star ingredient! Made with love, this recipe is sure to impress your friends and family and have them coming back for more every time!

As some of you know, I love fishing more than anything and the Baccaleui has some of the best fish in the entire world. Especially the cod fish! Fortunate enough to have fishermen like Frank in the family I get to go every now and then and boy have I ever caught some big ones! Check it out!

Cod fish is and has been for decades, a staple in Newfoundlanders and Labradorians kitchens. Often getting many families through a long hard long winter. Fish and potatoes were a huge portion of our diet and still to this day remains the same.

I sure hope you enjoyed that tutorial for the fish batter recipe you will need the following:

Ingredients:

  • 2 Tbsps. cornstarch
  • 1tsp. salt
  • 1 tsp. sugar
  • 1 tsp. vinegar
  • 1 Tbsp. Vegetable oil
  • 1 & 1/2 Tbsps. of baking powder
  • 1 cup all purpose flour
  • 1 cup very cold water
  • Lard or oil for frying
  • Cod Fish

Method:

Make sure your fish has been placed on a paper towel prior to mixing batter in order to soak up excess moisture especially if it has been frozen and thawed.

Using a thermometer heat oil or lard to 350 degrees. Combine dry ingredients and then add water, vegetable oil and vinegar.

Dip fish in batter one piece at a time and using a bit of a twirling motion slowly and carefully place each piece of fish in your preheated oil. (see tutorial)

Be sure to have a cover or extra oil handy incase of fire

If you don’t have a deep fryer be sure to use a thermometer! Oil can catch fire quickly.

Fry each piece of fish until golden and crispy. This usually takes about 4-5 minutes or so depending on the size and thickness of the fish. Tail pieces will fry faster.

Remove from oil when the desired color is reached and place on a cooling rack placed on top of a cookie sheet lined with paper towel. This ensures the fish stays crispy and is not sitting directly in oil. The paper towel makes for easy cleanup.

Please be careful when deep frying should your temperature get too high on you simply add more oil it cools it rapidly

Always have a lid close by for safety.

hints and tips:

For an even crispier batter try adding a teaspoon or 2 of rice flour to the all purpose flour.

You can serve this alone, with salt and vinegar or for a real treat try my homemade tartar sauce Inspired by Sandy Hansen of Inuvik

Tartar Sauce:

  • 1/2 small onion finely minced
  • juice of 1/2 a lemon
  • a dill pickle or 2 finely chopped
  • about 1/2 cup of real mayo
  • salt pepper garlic to taste

Combine all and place in the refrigerator enjoy!
