Baked beans, my hubby just loves them especially when made with smoky bacon. A simple easy and delicious recipe which takes no time to prepare. They just take 6-8 hours to cook. Low and slow is the way to go. This ensures the perfect texture.
I got the cutest bean pot you’ll ever see in the video. It was from a little elderly lady. She decided to clean out her cupboard and have a yard sale. I just love yard sailing and I manage to find a few really good deals like this bean pot for example $2 ! Unbelievable, I don’t think they even make them like that anymore.
This recipe comes from a cookbook from the town of Bay de Verde. Its called Come Cook With Bay de Verde Recreation Commission. The recipe was submitted by a Margaret Norris. Thank you for sharing! How to make these easy Beans:
- 2 cups of dry white pea beans
- 1 onion chopped
- 1/2 cup of salt pork or bacon diced
- 2 Tbsp. vinegar
- 1tsp salt
- 1/4 cup molasses
- 1/4 cup ketchup
- 1/2 tsp dry mustard
- 1/2 tsp yellow prepared mustard
- 3 Tbsp brown sugar
- pepper to taste
Pick over and rinse beans. Soak overnight covered in cold water. The next morning simmer beans in the water they had been soaking in for 30 mins. add to your bean pot with all other ingredients. Mix well. If necessary add boiling water to ensure beans are covered. I also used strips of bacon over top because you know everything is always better with more bacon.
Cover pot and bake slow at 250 – 300 degrees for 6-8 hours. Add boiling water as necessary to keep beans covered while cooking. Do not add water during the last 1/2 hour!
