
I just love blueberries! Especially in the winter when your craving a little piece of summer. This recipe just hits the spot. I was becoming bored of all the chocolate and candies from the Christmas festivities, so I decided to give this recipe a try.
Chuck full of gorgeous blueberries it was exactly what my heart was desiring. I served mine with warm custard. I’m using Birds. You can find it here:

I did adjust the recipe slightly adding a little more almond flavoring Watkins of course ; and I used 1/2 Carnation evaporated milk & 1/2 water for the milk as I only had Carnation on hand.

Its been around for over 100 years. I know many many babies were bottle fed Carnation milk for years, especially if you were unable to access Similac and the like. I have an old friend who used to open it & drink it straight from the can. I’d never be able to do that 🙂
Here’s a link for Watkins as well not only do they sell flavorings but they also sell soaps, dip & gravy mixes etc. etc. A wonderful array of products and I’m sure the quality speaks for itself they’ve only been around since 1868 !! They are the very best in my opinion.
On with the tried & true recipe:
For this delicous cake you will need:
Ingredients:
- 2 Cups flour
- 2 tsp. Baking powder (Magic)
- 3/4 tsp. salt
- 1/2 cup butter melted
- 1 cup sugar
- 2 eggs lightly beaten
- 1 & 1/2 tsp. Vanilla
- 1/2 tsp. Almond Flavour
- 3/4 cup milk ( I used 1/2 Carnation evaporated diluted with 1/2 water)
- 2 & 1/2 cup Blueberries I used frozen ( leave frozen until ready to use)
Method:
Cream butter and sugar add your flavorings and then your lightly beaten eggs. In a separate bowl combine flour, baking powder & salt. Alternately add this along with the milk a bit at a time until its all incorporated in. Fold in blueberries being careful not to over mix. ( you don’t want blue Batter)
Bake at 370 for 35-40 mins or until a toothpick inserted into the center comes out clean. Cooking times may vary according to your ovens temperature.
