
Apricot prune coffee cake. Don’t let the name fool you! Its truly my favorite. This cake is so moist with the perfect crumb. Did I mention those ooey gooey brown sugary bits? I could hardly wait for this one to bake let alone cool down.
This tried and true recipe comes from my wonderful mother in law and as you have seen; she really does have the best recipes. I’ve had a number of people try it and they all agree it truly is delicious.
This apricot prune coffee cake is my absolute favorite and seriously the best coffee cake I have ever had hands down. Ever! I can’t say enough about it. The deep flavor of the prunes balance the tartness of the apricot perfectly. Don’t even get me started on the brown sugar cinnamon bits. So Good.

Dried apricots and prunes are used for this recipe. You can purchase them at any grocery store.

Here’s how to make my absolute favorite coffee cake Hands down!
Ingredients for the cake”
- 2 1/3 cup of flour plus 1 Tbsp. for the brown sugar mix
- 1 cup of dried prunes chopped
- 1 cup dried apricots chopped
- 1/2 cup water
- 3 tsp. baking powder
- 1 tsp. salt
- 2/3 cup butter
- 1 cup white sugar
- 2 eggs
- 1 tsp. good vanilla
- 1 cup brown sugar
- 1 Tbsp. cinnamon
- 3/4 cup milk
Method:
Combone chopped prunes and apricots with 1/2 cup water simmer for 5 mins let cool.
Cream butter sugar add eggs 1 at a time add vanilla
In a seperate bowl sift flour baking powder and salt
Add flour mixture to creamed butter mixture alternatly with your milk. Fold in prunes and apricots ( make sure they are cool)
Melt 1/3 cup butter with brown sugar, add 1 Tbsp flour and cinnamon.
In a 9 inch greased and floured Bundt pan layer cake batter then cinnamon mix 3 times ending with cinnamon mixture.
BAke at 350 degrees for 55 mins cool 5 mins in the pan for easy removal.
