Of all the things I crave at Christmas, Chocolate peppermint bark has got to be one of my absolute favorites. With the combination of light and dark chocolate and then the creaminess of the milky mint areo followed by the perfect peppermint crunch. OMG! Yum
I got a little creative and decided to place a big square of it in my Mocha Hot Chocolate last night. Can you say Game Changer? Gives a whole new meaning to those raging Hot Chocolate bombs! That’s for sure and way way less work. As an added bonus you can pop one of these beauties into your mouth at any time no need to wait for the kettle to boil.

The key to this is to use good quality ingredients as it is for most of my recipes that’s why they are tried and true! I’m a firm believer in quality over quantity.
How to make this most delicious bark
Ingredients:
- Good quality dark or semi sweet chocolate. I use Kirkland its 51% cacao
- about 3/4 cup good quality white chocolate
- 2 Mint aero bars coarsely chopped
- 4 Candy canes crushes
Super simple Method:
Simply, over a double boiler melt your dark or semi sweet chocolate. It will vary on the amount depending on the size of your cookie sheet. A great tip is to have the water boiling and the bowl on top before you add the chocolate.
While that’s warming up place about 3/4 cup white chocolate into a baggie like a sealable sandwich bag. ( another trick) place your white chocolate into the bag and place the bag in very hot almost boiling water ( a mug works well) . Go back and forth between the stove and the bag moving the chocolate around until its completely melted.
Spread the dark chocolate onto a parchement lined cookie sheet to about 1/4 inch thickness maybe a tiny bit less. Using an offset spatula really helps.
Next cut the corner off the bag with the white chocolate in it. Place random blobs over the dark. I did about 6. Next, take a butter knife and swirl through creating a marble effect. Place 2 coarsely chopped Mint Areo Bars on top of that and then about 4 crushed candy canes over top of that. Refrigerate for at least an hour break into pieces and enjoy.
For those of you unfamiliar with Aero Mint it is a Milk chocolate bar made by Nestle

This is the Brand of Chocolate chips I use its very very good especially in cookies.
